Barrier depends on the film structure, not the shape
A common mistake is assuming a stand-up pouch protects better than a flat one. Barrier comes from the laminate, not the format. Both pouch types can be built with the same high-barrier structures — for example PET / AL / PE (foil) or PET / metallized PET / PE — so oxygen and moisture protection depends on whether you include an aluminum-foil or metallized layer, not on whether the bag stands up.
